"Your Faithful Friend"

While in Kenya, I met Linah, a little girl who forever changed my life. Here is the letter she gave me the day I left.


"As I write this letter I want you to know that I love you. I will miss you when you travel back to America. I pray for you to pass your examination for your college. Promise that you will come when Christine comes to visit Kenya because I will miss you like my own first mother. Everywhere you go remember that I love you. And I pray for you to live long and longer. When  you send for me a letter remember to give me one of your pictures. I will never forget you. I promise one day to become an American journalist. And I remember how you look and I feel like crying. When I remember playing with you and the maroon balloon with my friends, I miss you. Promise that you will come to visit me. I love you very much. God loves you. Replace another letter and your picture for me. Safe journey.

Ugali (A Kenyan Recipe)

After eating so much amazing food on my mission trip in Kenya, one of my favorite dishes turned out to be one called ugali!! Ugali was the main dish served to the children at Serve Academy most nights for dinner, and they love it just as much as I do. 

Composed mainly of maize flour and water, ugali is whisked together into the consistency of a sandy dough and is used to dip into other favorite Kenyan meals such as greens or stew.

Here's how to make it:

Ingredients:

4 cups water
1 tsp salt
2 cups finely grounded white cornmeal

Directions:

1. Lightly salt the water in a pot on the stovetop on high. Bring salted water to a boil.
2. Slowly mix in cornmeal to the water.
3. Reduce heat to medium heat and consistently stir, mushing up any chunks with a spoon, until the mush pulls away from the sides of the pot and becomes really thick (this should take a total of ten minutes).
4. Remove from heat completely, allowing it to slightly cool.
5. Place into a large bowl, wet hands with water, and form into one large ball to serve.

Enjoy with your choice of a yummy dipping sauce!! :)
